Gin Cured Salmon with heritage beetroot, avocado puree and sourdough croute

Beetroot carpaccio with whipped goats cheese, garnished with candied walnuts and roasted grapes
Main choices:
Rolled lamb breast with lentil and bean cassoulet garnished with crispy kale
or
Roasted squash, harissa feta on a bed of lentil and bean cassoulet garnished with crispy kale
Serving dishes with tender stem broccoli and carrots will be served to each table
